Butterflied lemon chicken

INGREDIENTS

1 x Oven ready marinated Whole Chicken from the Butcher – Lemon Pepper Flavour
4 x Whole corns
Butter
Smoked Paprika
Avocado
Baby Cos Lettuce Gems.
Creamy Salad Dressing from the Deli
Fresh Dill
Fresh Lemon

METHOD
  1. Preheat oven and cook your chicken as written on the product instructions. Meanwhile you can prep your salad in advanced. Melt the butter. Start by removing the husks and cleaning your whole sweet corn.
  2. Heat a grill plate to a med to a med-high heat. Brush the corn with a mix of the melted butter and smoky paprika. Then add to the grill plate, turning as you go until lovely and charred all the way round.
  3. Remove from the grill plate and once cooled, slice down the sides of the corn removing the kernels in chunks. They are now ready to add to your salad.
  4. One a large platter lay out the Baby Cos Lettuce Hearts, scattered nicely. Also add the avocado chopped in lovely wedges. One top of this, add your cooked corn.
  5. Pour over the cream dressing and sprinkle with fresh dill. Pop the lemon cut into convenient wedges on the side of the platter.
  6. Once the chicken is cooked through, remove from oven and let it cool for 5 minutes. Remove from the bag and remove tender chicken from the bone, add it to your platter and serve for the crew to help themselves.
