ZESTY PRAWN CUPS

INGREDIENTS
  • 20 cooked prawns (peeled)
  • 8 cos lettuce leaves (washed & stalks trimmed)
  • 2 avocados (diced)
  • Dill, chives, salmon caviar or a lemon wedge (optional garnish)
 
Dressing:
  • 1 cup whole egg mayo
  • 1/3 cup tomato sauce
  • ¼ cup Worcestershire sauce
  • 1 tsp tabasco sauce
  • ½ lemon juice
All ingredients available from Brickworks Ferry Rd.


STEP 1: Peel prawns and dice avocados.
 
STEP 2: Make dressing by adding all dressing ingredients into a mixing bowl, stirring until well combined and dusty pink in colour. Set aside in the fridge.
  
STEP 3: Chop peeled prawns into bite size pieces, then in a large mixing bowl, add chopped peeled prawns and diced avocado.
 
STEP 4: Remove dressing from the fridge and add half the mixture to the prawn and avocado mixture, stir gently to combine.
 
STEP 5: Place lettuce leaves on a serving platter and evenly spoon prawn and avocado mixture into each cup.

STEP 6: Add an additional teaspoon of dressing to each lettuce cup and garnish with sprinkles of dill and salmon caviar (optional).
 
*A great tip for dicing avocado is to half the avocado, remove the seed and very carefully cup the avocado in your hand, slowly making vertical 1cm thick slices then do the same horizontally (like slicing a mango). Use a spoon to gently lift the avocado out.
