Vegetarian Rice Paper Rolls

INGREDIENTS

  • 1 x pack of Rice Paper
  • 1 cup of peanuts or cashews – crushed
  • 6 organic eggs
  • 1 x carrot – shredded
  • ½ red cabbage – shredded
  • 1 cup snow pea sprouts
  • 1 cup coriander
  • Salt + Pepper
  • Sweet Chilli Dressing
 
METHOD
Whisk the fresh eggs in a mixing bowl, season with salt.

 

Add the egg to a pre-heated non-stick frypan or wok over a med-high heat. Swirl around in a circle for an even distribution and flip once as soon as you are able to. Cook for another 40-60 seconds the other side. Remove from pan onto a chopping board and slice ever so finely.

 
Set up a station tobring together your rolls. The more prepped you are the easier it will be.

 
Submerge a sheet of rice paper into a shallow bowl of water and then transfer it onto a paper towel on a chopping board. Add you cut up goodies and then wrap and roll!

 
Repeat until all of your rolls are made.

 
Serve on a colourful platter with the Sweet Chilli or dipping sauce of your choice.
