STICKY FIG SALAD

INGREDIENTS
  • 1 burrata cheese (ball)
  • 200g rocket leaves (washed)
  • 100g walnuts (crushed)
  • Olive oil
  • Balsamic vinegar
 
Dressing
  • 6 figs (halved)
  • Aged balsamic
  • Lemon juice
  • Salt
 All ingredients available from Brickworks Ferry Rd.


 
STEP 1: Prepare ingredients and preheat oven to 190 degrees C.
  
STEP 2: Line a tray with baking paper and place figs cut side up on lined baking tray.  

STEP 3: Lightly drizzle with aged balsamic.

STEP 4: Bake figs until bubbling, tender, and lightly caramelized, about 20 minutes.

STEP 5: While figs are baking, prepare the salad by layering in a serving bowl rocket, crushed walnuts and centring the burrata cheese ball.

STEP 6: Remove figs from oven and sprinkle with lemon juice and salt, allow to cool for 10mins, then gently add figs to prepared salad. Dress with a drizzle of olive oil and balsamic vinegar.
