  • 500g fresh gnocchi from the deli
  • 1/2 small butternut pumpkin, peeled & seeded, cut into 2cm cubes
  • 175g unsalted butter
  • 1/3 cup sage leaves
  • Shaved parmesan
Step 1 – Preheat oven to 190 deg Celsius & add the cubed pumpkin, sprayed with olive oil. Cook for 20 mins or until just tender. Set aside & keep warm.

Step 2 –Place butter in a small pan over a med-low heat. Cook for 3 mins until butter just starts to brown. Add sage for 1 minute until crisp then add Gnocchi to brown.

Step 3 – Remove sage from pan & drain on a paper towel. Reduce heat & keep cooking the butter on low until golden brown.

Step 4-  Add in Gnocchi & pumpkin until golden brown

Step 5 – To 4 serving bowls (or one large platter) add the drained gnocchi along with salt & pepper, pumpkin and top with sage leaves a& burnt butter sauce.

Step 6 – Sprinkle with parmesan cheese, serve & enjoy!
