Pearl Cous Cous Salad served with Skewers

  • 1 cup dried pearl cous cous
  • ¼ cup olive oil
  • Salt & Pepper
  • 1 teaspoon Dijon mustard
  • 1 teaspoon fresh lemon zest
  • Juice of half a lemon
  • 1 x Lebanese cucumber – diced
  • 1 x pack of tomato medley – diced
  • A handful of fresh herbs – parsley & dill
  • ¼ cup raisins
  • A selection of lamb skewers from the deli


Prep your salad ingredients.

Bring a large pot of water to boil, add salt, add cous cous and cook until tender for about 8-10 minutes and then drain.

While that is cooking, mix your salad dressing in a bowl - The olive oil, salt, pepper, mustard, honey, lemon zest and lemon all in a bowl. Whisked beautifully together.

Add the drained cous cous to your salad dressing and mix gently but well.

Stir in the remainder of the ingredients - cucumber, tomatoes, herbs and raisins.

Serve on its own for a light lunch or as a side with meat or seafood available at the The Standard Market & Co Butcher or Reef Seafood & Sushi at Brickworks Ferry Road. We went with the yummy lamb skewers today!
