Paprika Prawns & Green Goddess Bites

Ingredients:

  • 2 small garlic cloves, crushed
  • 1 tsp paprika
  • 1 tsp finely grated lemon rind
  • 2 tbsp extra virgin olive oil
  • 24 medium prawns deveined, and tails removed.
  • 1 avocado
  • 125g cream cheese
  • 1/3 cup fresh flat-leaf parsley leaves
  • 1 tbsp chopped fresh chives
  • 2 tbsp lemon juice
  • 2 Lebanese cucumbers
  • Micro herbs, to serve
  • Lemon zest, to serve
 

METHOD

Place the paprika, lemon rind, garlic and oil in a large bowl and season with salt and pepper. Add the prawns and toss to coat.

 
Heat a greased barbecue plate on medium heat. Cook prawns for 2 minutes each side or until cooked through. Transfer to a heatproof dish. Set aside for 5 minutes to cool. 

 
Meanwhile, place cream cheese, avocado, herbs and lemon juice in a small food processor. Season with salt and pepper.

 
Process until smooth, scraping down the sides every now and then.
 

Cut cucumber into 1cm thick rounds, removing the ends and place on a serving plate. Add a dollop of cream cheese mixture onto each cucumber round.

 
Top each cucumber with 1 prawn. Serve sprinkled with micro herbs and lemon zest. It’s ready to serve!
