Christmas Cheesecake Slice

  • 200g Anzac Biscuits
  • 100g of butter, melted
  • 500g of cream cheese, softened
  • ¾ cup sour cream
  • ½ cup caster sugar
  • 3 free range eggs
  • 2 tsp finely grated lime rind
  • ¼ cup of lime juice
  • 100g white chocolate, coarsely chopped
  • 100g raspberries
  • 100g white chocolate, extra, melted


Grease and line the base and sides of a slice pan, allowing the sides to overhang.

Process Anzac biscuits in food processor until finely crushed. Add butter and process until well combined. Spoon into prepared pan. Spread and press with a base of a jar and then pop in the fridge for 30 mins to chill.

Preheat oven to 150 degrees. Process the cream cheese and sour cream in a clean food processor until smooth. Add sugar and eggs and process to combine. Add lime rind and lime juice. Process to combine and then when that is done pour it over your prepped base.

Top with chopped white chocolate and raspberries. Drizzle melted white chocolate over the top, the messier and more abstract the better.

Bake for 25-30 minutes or until just set and then cool in oven with door ajar. Place in fridge for 2 hours to chill.

Remove from fridge and drizzle with melted white chocolate and lime zest for extra green and red Christmas cheer. You are ready to serve this delicious treat!
