APRICOT & COCONUT BLISS BALL

INGREDIENTS

  • 1 cup dried apricots
  • 2/3 cup desiccated coconut 1/2 cup almond meal
  • 2 tbsp maple syrup or honey 1 tsp vanilla extract
  • 1 tbsp white chia seeds
  • 2 tbsp water
  • Extra desiccated coconut for presentation

 
METHOD

Step 1 -Add the apricots to a food processor & process until fine.

 
Step 2  -Add the coconut, almond meal, syrup, vanilla, chia & water to the water & process again until combined.

Step 3 -Roll your mixture into balls, about a teaspoon at a time and roll in extra coconut.

Step 4 -Pop the balls into an air tight container and keep in the fridge. Enjoy!
