6 Mother's Day recipe ideas that are quick and easy to make

Flowers are fabulous and gifts are great. But really, is there any easier way to impress mum than with food? After all, for many mums, just to have one day where she doesn’t have to cook is one of the best Mother’s Day presents of all! 

But, what do you cook for mum on her special day? From breakfast in bed to marvellous mains and decadent desserts, we’ve got you covered with these 6 delicious Mother’s Day recipes. The best part is, they all take less than 20 minutes to make! That means you can get back to cuddles, quality time and, of course, giving her a couple of gifts, too!

1. Drop scones
Part pancake, part scone and 100% delicious. This treat originated in the UK and gives a tea party feel for your Mother’s Day breakfast. Make them just like pancakes by mixing flour, sugar, milk and eggs then cooking and flipping on a frying pan. The biggest difference is to make them slightly smaller and thicker to achieve a more scone-like texture. You can also use self-raising flour for a little more lift! Serve with whipped cream and jam for an extra sophisticated touch.

2. Nutella mug cakes
It doesn’t get much quicker and easier than this microwavable recipe. But, make no mistake — it’s seriously indulgent! It requires just three ingredients: Nutella, a gently-whisked egg and all-purpose flour. Mix them all together in a mug, then pop in the microwave for one minute. You’ll know it’s done when the top feels firm, yet it still feels soft and springy. Serve with ice cream topped with chocolate sprinkles and watch mum enjoy the mouthwatering goodness!

3. Smoked salmon scrambled croissant 
If mum is more of a savoury tooth, she’ll love this dish! It puts a fancier spin on a breakfast classic. Mix the smoked salmon with double cream, chives and egg, then scramble in a pan with butter. Meanwhile, heat a croissant on a grill until it’s crispy and golden. Sprinkle some more chives and parmesan on your scramble, scoop it into the middle of the croissant and you’re ready to serve up your gourmet-looking treat!

4. Creamy lemon parmesan chicken 
This one-pan dinner creates maximum flavour with minimal mess! It takes inspiration from French cuisine by adding creamy, citrus flavours to a poultry dish. Fry the chicken tenderloins in a pan with oil until cooked, then add cream, lemon oil and garlic. Stir in parmesan and green shallot, then sprinkle with pine nuts. Serve with some crusty bread and say ‘Bon Appetit!’

5. Bruschetta
For a slightly lighter meal, appetiser or Mother’s Day snack, you can’t go past Bruschetta. This Italian antipasto has a rich history, spanning centuries of Tuscan tradition. The simplest way to make it is to mix diced tomatoes, olive oil, garlic and vinegar, then spread onto grilled bread rubbed with olive oil and garlic. But, you can also get creative and top your toasts with a mixture like Prosciutto, melon, and balsamic vinegar. Either way, this is a simple dish that looks beautiful and tastes even better!

6. Shakshuka eggs
This is one of those recipes that looks far more complicated and difficult than it actually is!. With North African and Middle Eastern influences, Shakshuka (or, baked eggs) is commonly eaten for breakfast, but can really be enjoyed any time of day!  Add tinned tomatoes, onions, garlic and spices to a skillet or pan, and cook until lightly simmering. Then, can crack your eggs on top and cook until they are to your’s (or mum’s!) liking. Top with a generous amount of fresh herbs, and some goat’s cheese if you want to add some extra flair.
